This cheesecake starts with a gingersnap and brown sugar crust. The filling is full of Fall spices like cinnamon, nutmeg, ground cloves, and ground ginger. The whipped topping is a cream cheese and vanilla base piped on and then finished off with a dusting of Pumpkin Pie Spice.  This cheesecake is the perfect substitute for Thanksgiving Pumpkin Pie (may be even better).
